A Pasta-Pizza Fusion That’s Perfect for Busy Nights.

If you’ve ever faced the dinnertime dilemma of pasta versus pizza, this Tortellini Pizza Bake is the answer you didn’t know you needed. One evening, unable to choose between the two, I decided to combine my favorite elements of each and create a comforting, cheesy dish that’s sure to become a staple. The result? A bubbling casserole packed with pizza flavors and the heartiness of tortellini—so good, I’ll definitely be making it again!

Ingredients

• 6 oz cheese tortellini (fresh or refrigerated)
• 1 can diced tomatoes with garlic (undrained)
• ¼ cup of small pepperoni slices (or large pepperoni, diced small)
• ¼ cup of black olives, sliced
• 2 tablespoons diced green peppers (or jalapenos for a spicy kick)
• 1 ½ to 2 cups shredded mozzarella cheese

Step by Step Instructions

1. Preheat your oven to 400°F.
2. Cook the tortellini according to package instructions, but stop about 2 minutes before they’re fully al dente. Drain well.
3. Lightly grease a 9×9 baking dish, then add the cooked tortellini.
4. Add the undrained diced tomatoes, pepperoni, green peppers or jalapenos, and black olives (reserve some pepperoni and veggies to layer on top). Stir until evenly combined.
5. Sprinkle mozzarella cheese over the top and then layer the reserved pepperoni and veggies on top like a pizza.
6. Bake for 25-30 minutes, or until the cheese is melted and starting to brown.
7. Serve hot and enjoy!

Tips and Serving Suggestions

• The cheesy tortellini gives you the satisfying chew of pasta, while the creamy filling melds perfectly with classic pizza toppings. 
• I like to add red peppers and parmesan cheese to my pizza so did the same with this dish before serving.  Do you always dip your pizza in ranch?  Try drizzling some over the top!
• Add your favorite pizza toppings to the mix—mushrooms, onions, or extra cheese—to make it your own.
• This recipe can easily be doubled for a 9×13 baking dish, making it perfect for family meals or potlucks.
