Muffin Tin Eggs – Two Ways

A Delicious, Flexible Recipe for Every Diet.

If you’re searching for a quick breakfast that’s both delicious and versatile, muffin tin eggs – two ways may just become your go-to meal. I originally started making this recipe while following a low carb diet, but it’s so good I still whip it up even now that carbs are welcome at the table. The best part? You can mix and match ingredients to suit your cravings, pantry, and family preferences.

My husband prefers the basic bacon and egg version, while I like the veggie and cheese filled one.  And there is nothing saying you have to only make these two ways, you can always throw a three meat version into the mix if you wanted to.  Drop in some cooked sausage, extra chopped bacon, and some diced ham instead of, or with, the veggies.  Then you’d have muffin tin eggs three ways!  

Ingredients

  • 12 slices of precooked bacon (or enough to line each muffin cup)
  • 10 eggs
  • Chopped veggies (I love mushrooms, tomatoes, and sweet peppers)
  • Shredded Cheddar Cheese (or your favorite blend)
  • Salt and pepper
  • Optional: green onions for serving

Step by Step Instructions

  1. Preheat your oven to 375°F and spray your muffin pan with oil.
  2. Line the sides of each muffin tin cup with precooked bacon.
  3. Crack one egg into each of six bacon lined muffin cups.
  4. Fill the other six of the cups with your chosen chopped veggies and a pinch or two of cheese.
  1. In a small bowl, scramble four eggs and pour the mixture evenly over the veggie filled cups. Salt and pepper everything to taste.
  2. Bake in the preheated oven for 13 minutes.
  3. Remove the tray, and sprinkle cheddar cheese on top of the cups with the cracked eggs.
  4. Return to the oven and bake for another 2-3 minutes, until the cheese melts.

Tips & Serving Suggestions

  • These muffin tin eggs are wonderful served with sliced tomatoes and avocado for a fresh, balanced plate.
  • If you’re not watching carbs, a slice of toast on the side is perfect.
  • Customize your own batch—choose your favorite veggies, cheeses, and even add herbs for extra flavor.
  • You don’t have to make all 12 at once, but if you do, they reheat beautifully. They’re perfect for meal prepping: just grab a few in the morning for a fast, wholesome breakfast.
