Ingredients

  • 1 pound breakfast sausage
  • 8 ounces cream cheese
  • 1 ¼ to 1 ½ cups low carb milk (such as Fairlife)

  • 6 to 8 large eggs, scrambled
  • 1 tablespoon butter

Step by Step Instructions

  1. In a large skillet over medium heat, brown the breakfast sausage until it’s cooked through and nicely crumbled.  Drain any excess fat from the pan, or remove with a paper towel.
  2. Add the cream cheese to the pan and stir until it’s melted and fully incorporated with the sausage.
  3. Pour in 1 ¼ cups of low carb milk, stirring well to create a smooth gravy. If you prefer a thinner consistency, add up to 1 ½ cups.
  4. Season with salt and pepper to taste, and simmer for a few minutes while you cook the eggs.
  5. In a medium skillet over medium heat, melt one tablespoon of butter and add the eggs.  Stir until the eggs are fluffy and done to your desired consistency.  Salt and pepper to taste.
  6. Serve the cheesy sausage gravy generously over the freshly scrambled eggs. Enjoy!
