A Beloved Birthday Cake turned into Irresistible Cupcakes

Some recipes aren’t just about flavor—they’re about family, memory, and the stories that rise with each batch. In my family, these cupcakes have become that kind of tradition, rooted in a birthday cake that’s been cherished for generations.

According to my mom, it all began with my father’s mother, whose creativity and love ensured that each of her six children felt special and unique on their birthday.  She made each one of them a special cake that she baked just for their birthday each year.  They were never the same as any sibling’s and lovingly repeated every year for that child. That meant every birthday came with a signature flavor, a sweet constant in the swirl of growing up. My father’s favorite cake is still the same one his mother made every year while he was growing up.

Inspired by that devotion, my mom wanted to carry on the tradition. For my birthdays, she created a two-layer vanilla cake, with vanilla pudding and chocolate chips mixed for the frosting, both inside and atop the cake. Always served cold, the creamy pudding and crisp chocolate chips were pure joy, and to this day, I prefer my chocolate chilled—just like those birthday memories.

Our family and friends came to love this cake so much that it became a requested favorite at gatherings. Wanting to make the celebration even more shareable, I transformed the classic into cupcakes. The mini chocolate chips now go straight into the vanilla batter, each cupcake is filled with silky vanilla pudding, and they’re finished with a rich chocolate ganache. These cupcakes are irresistibly good—and you don’t need a party to make them. But every time I bake them, I’m instantly transported back to those special birthdays, surrounded by generations of love and laughter.

Ingredients

  • 1 package of instant vanilla pudding
  • 2 cups of cold milk

Ganache:

Step by step instructions

  1. In a medium mixing bowl, combine the pudding mix and milk and mix on low for about two minutes, until fully combined and thickened.  Cover and put in the fridge to set.
  2. Preheat the oven to 350 degrees.  Add 20 paper cupcake liners to your cupcake pan.  Add one tablespoon of the dry cake mix to the one cup of mini chocolate chips, mix to coat and set aside.
  3. Add the remaining cake mix, the water, eggs, and oil to a large mixing bowl and mix on low for 30 seconds and then medium for two minutes. 
  1. Add the coated mini chocolate chips to the batter and gently fold them in with a spoon or spatula. 
  2. Fill the cupcake pan, using ¼ cup of batter for each cupcake (about 2/3 full).  Bake for about 20 minutes, until golden and a toothpick inserted in the center comes out clean.  Remove from the pan and let cool completely on a wire rack.
  3. When fully cooled, place ¾ cup of mini chocolate chips in a small bowl.  Heat the 1/3 cup of heavy cream in a bowl in the microwave (or in a small saucepan on the stove) for 30 seconds to a minute, until steaming hot but not boiling. Pour the hot cream over the chocolate and cover.  Set aside.
  1. Put the prepared pudding in a cake decorating bag (or Ziploc bag) and cup off the tip leaving an opening about ¼ inch.  Twist the top of the bag closed.
  2. Insert the open tip of the bag into the center of a cupcake about ½ inch and squeeze in pudding until the cupcake starts to expand very slightly, then remove the bag. Try not to overfill the cupcake so that no pudding spills out on top of the cake.  Repeat with each cupcake.  (You will not use all of the pudding… enjoy the rest as a snack!)
  1. When all cupcakes are filled, remove the cover from the cream and chocolate and slowly (to prevent air bubbles) mix them together until smooth and chocolatey.    
  2. Carefully dip the top of each cupcake into the chocolate and pull straight up and away to create a smooth frosted top.   Let the topping set and refrigerate until ready to serve.
