One Pan Chicken Crack Rice

An Easy, Flavor-Packed Weeknight Meal Ready in Under 30 Minutes.

Chicken crack recipes have become kitchen favorites in recent years—no surprise, since they’re creamy, cheesy, and bursting with ranch flavor. My first introduction to chicken crack was a crock pot version for sandwich filling, made with cream cheese, chicken, ranch dressing mix, and bacon. Since then, I’ve seen it reinvented as casseroles, soups, and more, often with sour cream or cream of chicken soup in place of the cream cheese along with noodles or rice.

This version sticks close to the original but turns it into a full meal with the addition of chicken broth and rice, all made quickly on the stovetop with rotisserie chicken. Why mess with a winning flavor combo, right? We love this dish on busy weeknights, and the leftovers are always a hit for lunch. I hope this recipe becomes a go-to in your home too.

Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 8 ounces cream cheese, softened (brick style works best)
  • 2 cups shredded cheddar cheese
  • 1 packet ranch dressing mix
  • 2 cups chicken broth
  • 2 cups minute rice
  • 1 cup chopped cooked bacon (about 6–8 slices)
  • Optional: sliced green onions for garnish

Step by Step Instructions

  1. In a large sauté pan, add the shredded rotisserie chicken, softened cream cheese, and chicken broth. Stir everything together, then bring the mixture to a gentle simmer over medium heat. Stir frequently, breaking up the cream cheese as it heats. The cream cheese is fully melted when the sauce looks smooth and creamy with no visible lumps—this usually takes about 3–5 minutes.
  2. Sprinkle in the ranch dressing mix and stir well until it’s completely blended into the sauce.
  3. Add the minute rice and mix until it’s fully incorporated, then sprinkle the cheddar cheese over the top. Cover the pan and reduce heat to the lowest setting. Cook for 2 minutes.
  1. Turn off the heat and let the pan sit, covered, for about 5 minutes. The rice should be tender and the cheese melted—if it’s not, let it sit another minute or two.
  2. Uncover the pan, add the chopped bacon, and gently fold everything together. Taste and adjust seasoning if needed.
  3. Top with extra cheddar cheese, more bacon if you like, and a sprinkle of sliced green onions. Serve warm and enjoy those cheesy, comforting bites!

Crock Pot Option:

To make this in a crock pot, add the cream cheese, rotisserie chicken, broth, and ranch dressing mix to the pot. Heat on low for about 4 hours, stirring occasionally to help the cream cheese melt evenly. Once the mixture is smooth, stir in the minute rice and continue cooking on low until the rice is tender (about 5 to 10 minutes). Mix in the cheddar and bacon.  Wait 5 minutes for the cheese to melt and serve.
