Quick & Easy Chicken Chili Rice: A Family Favorite

If you’re searching for a fast, flavorful dinner that will leave everyone at the table happy, my Chicken Chili Rice recipe is about to become your new go-to! Using precooked rotisserie chicken and convenient Minute Rice, you can put together a hearty, delicious meal with minimal effort and maximum flavor. It’s perfect for busy weeknights or those evenings when you just don’t want to spend hours in the kitchen.

What I love most about this dish is how simple it is—yet it’s always a hit. Every time I make it, my husband insists on seconds, which is the ultimate compliment in our house. The combination of tender chicken, colorful veggies, zesty chili flavors, and fluffy rice is pure comfort food, and you can customize it with your favorite toppings or add-ins. 

Ingredients

  • 2 cups of rotisserie chicken, chopped
  • 1 small onion, diced (about 1/2 cup)
  • 3-4 mini sweet peppers, diced fine (about ¼ cup) – NOTE: you can use any peppers you prefer, but I like the mini sweets for their vibrant colors.
  • 1 can of black beans, drained and rinsed
  • 1 can of southwest style corn, drained
  • 2 cups of chicken broth
  • 2 cups of minute rice
  • 1 tsp of garlic
  • 1 tbsp of butter
  • ½ tsp chili powder
  • 2 dashes of cayenne pepper
  • Salt and pepper to taste
  • Shredded Cheddar Cheese, Sour cream and sliced green onion or diced jalapeno (for toppings)

Step by Step Instructions

  1. Melt the butter, over medium heat, in a large sauté or fry pan.  Add the garlic and cook about 30 seconds, then add the onion and peppers.  Cook for 1-2 minutes until just beginning to soften.
  2. Add in the chicken, corn and beans and stir to combine.  Add the chili powder, cayenne pepper, and chicken broth and bring to a boil. 
  1. Stir in the minute rice and reduce heat to lowest setting.  Cover and simmer for 3 minutes, then turn off the heat.  Leave covered until all the moisture has been absorbed and the rice is tender (another 2 to 5 minutes).
  2. Serve hot, topped with cheddar cheese, sour cream and green onions or diced jalapeno.
