Enter my new favorite twist: crispy crunchy baby dill pickles, wrapped in seasoned phyllo dough and baked until golden. This recipe takes snack time to a whole new level, delivering all the crunch you crave without the heavy grease of fried pickles you’ll find in a restaurant.
What makes these pickles stand out? The phyllo dough brings a delicate, shatteringly crisp exterior that pairs perfectly with the juicy tang of baby dill pickles. Seasoned with garlic powder and crushed red peppers each bite packs a punch. Because baby dills are whole pickles you get a snack with a substantial, satisfying texture—plus, they’re easy to dunk in your favorite sauces!
Ingredients
- 1 jar of baby dill pickles
- 1 package phyllo dough (thawed)
- 2 tbsp melted butter, or olive oil
- 1 tsp garlic powder
- 1 tsp crushed red pepper
Step by Step Instructions



- Preheat your oven to 400°F or your Air Fryer to 390°F. Line a baking sheet with parchment paper.
- Drain the pickles and pat them dry.
- Lay out a sheet of phyllo dough, brush it lightly with melted butter or oil, and sprinkle with garlic powder and crushed red pepper. Fold the sheet in half so you have a long rectangle. (If your phyllo sheet rips, don’t worry, just patch it as best you can and keep going. It’ll still crisp up and taste great!)
- Place a pickle at the bottom of the rectangle, fold the long edges over onto the ends of the pickle and roll the pickle up, wrapping it tightly. Place seam side down on the baking sheet. Repeat for all pickles, brushing each with more butter or oil as you go.
- Brush all the wrapped pickles on your baking sheet with butter or oil and bake for 20 or air fry for 10 to 15 minutes until the phyllo is crisp and deeply golden.
- Serve hot with ranch, spicy mayo, or your favorite dipping sauce!



Tips and Serving Suggestions
- When working with phyllo dough, keep the sheets you aren’t working with covered with a damp cloth to prevent them from drying out.
- If you have any leftover phyllo sheets when you’re done, just re-roll them, wrap in plastic wrap, and refrigerate them to use later.
