Crispy Jalapeno Poppers: The Ultimate Game Day Snack

There’s just something special about jalapeno poppers that makes them impossible to resist. Whether you’re gathering for game day, hosting a party, or simply craving a savory treat, these little bites always steal the show. I’ve been in your shoes—deep frying is a hassle and can add unwanted calories, while oven-baked options don’t always give you that perfect crunch. And, much as I adore bacon-wrapped poppers, they can get messy and never seem crisp enough for my taste!

So, I rolled up my sleeves and got creative to develop the ultimate crispy jalapeno popper—bursting with flavor, filled with creamy cheese, and delivering a seriously satisfying crunch in every bite. By blending the fresh snap of jalapenos, the smoky punch of crisp crumbled bacon, the smoothness of cream cheese, and the light, shattering crunch of golden phyllo dough, I finally found popper perfection. No more mess, no more soggy bacon—just pure, crunchy goodness.

The secret to these poppers is the phyllo dough. It bakes up beautifully golden and crisp, locking in all the spicy, cheesy, bacon-y goodness—no frying required. They’re easy to make ahead, simple to assemble, and best of all, they stay delightfully crisp even after sitting out for a while. That makes them ideal for sharing at parties or any get-together.

Ingredients

  • 6 medium sized jalapenos
  • 8 oz of cream cheese
  • ½ cup of crispy, crumbled bacon
  • 12 phyllo sheets, thawed

Step by Step Instructions

  1. Remove the stems from the jalapenos and slice each in half lengthwise, removing the seeds and ribs. I like to use a grapefruit spoon for this—the serrated edge makes it easy to scoop everything out without tearing the pepper.
  2. Fill each jalapeno half with about 1½ tablespoons of cream cheese (or less if your peppers are smaller). Sprinkle a generous layer of crumbled bacon over the cream cheese, pressing it in slightly so it sticks. Set aside while you prepare the phyllo.
  3. Lay one phyllo sheet flat on a large cutting board or countertop. Lightly spray with oil or brush with melted butter, then fold the sheet in half from the shorter end so the oiled sides touch, forming a rectangle.
  1. Place a filled jalapeno half, lengthwise, at the bottom edge of the folded phyllo, with the cut side facing up. Fold the left and right sides of the phyllo over the jalapeno ends—this helps keep the cheese from oozing out. Now, starting from the bottom edge, roll the jalapeno up snugly in the phyllo, just like you’d roll an egg roll or burrito, making sure the filling is fully enclosed. Don’t wrap too tightly or the phyllo may tear, but keep it snug enough so it holds its shape. Place the wrapped popper seam-side down on a parchment- or silicone-lined baking sheet. Repeat with remaining jalapenos. (The first time I tried this, I didn’t fold the sides in, and all my cheesy goodness squeezed out the end with each bite! Lesson learned—secure those edges.)
  2. Lightly spray the tops of the poppers with oil and bake in a 400°F oven for about 15 minutes, until the phyllo is golden and crisp and the jalapenos are tender.  (You can also use an air fryer, if you’ve got one, and cook at 390 degrees for about 10 minutes).
  3. Let cool slightly before serving. If you’re anything like me, you’ll be tempted to eat them hot off the tray, but a few minutes of patience will save your tongue!
