Chicken Taco Rice

A fresh twist for Taco Tuesday

Ever crave tacos but want something a little different? This recipe delivers classic taco flavors and toppings in an easy-to-eat format. Scoop it up with tortilla chips for that finger-food feel, or add crushed chips on top and dig in with a fork—no mess!

For maximum flavor and texture, use chopped chicken breast for chunky bites in every spoonful. A tip: dice chicken while it’s partially frozen for easier cutting. Prefer less prep? Ground chicken or turkey works just as well. Either way, this meal is ready in less than 30 minutes!

Ingredients

  • 1 pound skinless, boneless chicken breast, diced small
  • 1 packet taco seasoning (about ¼ cup)
  • ¼ cup prepared queso (mild or spicy, your choice)
  • 2 cups instant rice
  • 2 cups water
  • 1 large bag tortilla chips

Toppings:

  • 2 cups shredded lettuce
  • 2–3 Roma tomatoes, diced
  • 1 cup sour cream

Step-by-Step Instructions

  1. Dice chicken into small, even chunks for quick, uniform cooking.
  2. Place chicken in a large fry pan and cook over medium-high heat, stirring occasionally until pieces are no longer pink and cooked through, about 6–8 minutes. (Check doneness by cutting a piece—there should be no pink inside.) Do not drain.
  3. Sprinkle taco seasoning over cooked chicken and stir until all pieces are well coated.
  4. Add 2 cups of water and queso to the pan with the chicken and taco seasoning. Stir to combine, then bring the mixture to a boil.
  5. Reduce heat to low. Stir in instant rice, cover, and let cook for 2 minutes. Turn off the heat and leave covered for about 5 minutes, until the liquid is absorbed and the rice is tender.
  6. While rice absorbs the liquid, prepare toppings: shred lettuce and dice tomatoes.

Serving Suggestions

Spoon chicken taco rice onto plates. Add your favorite toppings. Scoop it up with tortilla chips or sprinkle crushed chips on top for extra crunch!
